Chopped turkey blended with shredded mozzarella cheese and encased in a gravy-soaked browned butter bread stuffing. Coated in Italian breadcrumbs and fried until golden brown.
Stuffing Hush Puppies... aka Amazeballs

INGREDIENTS:
Roasted Turkey, Finely Chopped | 1 Cup |
Mozzarella Cheese, Low-Moisture Shredded | 1 Cup |
Herb & Lemon Gravy, Cold | 1 Cup |
Browned Butter Bread Stuffing, Cold | 2 Cups |
Italian Curled Parsley, Minced | ½ Cup |
All-Purpose Flour | 2 Cups |
Large Eggs, Yolks & Whites Whisked Together | 4 Each |
Water | 2 Tablespoons |
Italian-Seasoned Panko Breadcrumbs | 2 Cups |
Vegetable Oil | 2 Quarts |
PREPARATION METHOD:
- Set up a breading station by putting each component in a separate shallow bowl:
1) all-purpose flour
2) whisked eggs + water
3) Italian-seasoned panko breadcrumbs
– You can use regular breadcrumbs too, but I like the Panko because it gives more crunch. - In a large mixing bowl, fold together chopped roasted turkey, shredded mozzarella cheese, gravy, stuffing, and minced parsley until well-combined.
- Using a 1-oz portion scoop, form stuffing mix into balls and bread each ball by lightly coating the entire ball with flour, covering the floured ball in egg wash, then generously crusting the ball with breadcrumbs. Place breaded stuffing balls onto a parchment-lined sheet and freeze for 15 minutes to help the breading set.
– If you don’t have a scoop, then make each ball using 2 Tablespoons of stuffing.
– At this point, you can actually keep the balls frozen and fry them later (whenever the mood for fried foods strikes you). If you’re going to fry the balls from frozen, just lower the fry temp to 325°F and fry for a couple minutes longer. This way the center of the ball can cook without burning the breading. - While the balls are chillin’ in the freezer, heat up the vegetable oil in a large pot until the oil is ~350°F. Once the oil is hot, add 5-7 balls to the oil. Don’t add too many balls or the fry oil temp will drop too low (There’s a nasty joke in here, enjoy yourself…)
- Fry the stuffing balls until golden brown, turning and flipping them if they are not completely submerged in oil. Balls should be cooked in ~4 minutes total. Repeat the small-batch frying until all the balls are fried.
- I said “balls” as many times as I could in the method…because it makes me giggle…but now that they’re fried, enjoy your hush puppies while they’re hot and fresh.
